我不是個美食主義者,而美酒於我如今常是得之我幸,至於兩番風味在口中的撞擊則一直是個困擾,尤其是烈酒,即使經過多年的嘗試,仍很難將烈酒與食物牽扯上關係。但這一兩年來多少達人前仆後繼的努力推動,望之總有一股隱隱騷動,只是環顧眾酒友仍多單飲不食,頂多以棍子麵包洗去口中餘味,猜想其中應有一些我等所尚未參透的道理在,吧?這種種困惑,造就了我動念請認識既久,也推廣已久的美食作家葉怡蘭來協助社團辦一場酒食搭配品酒會的念頭。

Nose:清楚的泥煤、很甜的香草、微微的燒烤煙燻、少許海鹹,麥芽、穀物感逐漸增加,放置一段時間後浮出些許柑橘甜,甜味十分清晰,可惜下滑速度快,尾端出現一些麥芽焦味(紀錄於品酒會)21

Nose:在略顯刺激的酒精中透出了雪莉甜,濃濃的柑橘蜂蜜甜與略呈柔軟的乳脂,莓果、青蘋果、蜜餞類的果酸逐漸清晰,活潑的屬性過了10分鐘緩慢沈穩,增添了許多燒烤橡木桶的厚實感,一點點木炭、炭烤暗示,帶有深沈韻味的蜂蜜、麥芽、乾果甜,30分鐘後更出現一股奇妙的煙燻木質,溶著些許黑巧克力,不過也摻了一點點的苦中藥,40分鐘後的木質單寧感越來越多 23
